Creamy Raspberry Dressing (Oil-free, vegan)

If you want to make your salads look more vibrant try my creamy raspberry dressing. It is oil-free and of course vegan.

This dressing is great on salads with added protein such as tofu, tempeh, chickpeas, beans or vegan processed foods like chick’n tenders.

It is very convenient to use frozen raspberries in the recipe so you can toss a salad with summery frame of mind any time of the year.

Want something more? Pour it over brown rice or quinoa bowl with root vegetables and again some vegan protein for another layer of flavors.

ATTENTION! This raspberry dressing is highly addictive and makes you fall in love with greens and veggies again!

It takes only few minutes to make this luscious pink dressing. Just put all ingredients in a high-speed blender and blend until smooth. Start with 60ml of water first and add more if needed until you reach the desired consistency.

Ingredients

  • 1/2 C raspberries (fresh or frozen)
  • 1/4 C raw cashews, soaked for 2 hours
  • 1 tbsp white wine vinegar
  • 1 tsp whole grain mustard
  • 1/2 tsp salt
  • 1 tsp coconut sugar
  • black pepper to taste
  • 60-90ml water

Instructions

  1. Put all ingredients in a high-speed blender and blend until smooth. Start with 60ml of water first and add more if needed until you reach the desired consistency.
