Israeli Couscous Salad with Citrus Dressing

Refreshing Israeli couscous salad with bell pepper, cucumber, fresh herbs and citrus dressing.

Ingredients

Instructions

  1. Heat oil in a pan over medium heat. Add couscous and stir for few minutes until lightly toasted. Then pour water and bring to boil. Lower the heat, cover and simmer for 10 minutes until couscous is al dente.
  2. Drain the excess liquid and let it cool to room temperature.
  3. Once cool mix with diced vegetables and greens, lime and orange juice and season with salt and pepper.
  4. Serve as a salad or side dish.
