Chickpea "chicken" soup

Comforting and nourishing chickpea noodle soup.

  1. First mix nutritional yeast and hot water in a glass and let it sit.
  2. Cut the carrot lengthwise and slice it. Heat oil in a pot over medium heat and sauté onion, carrot and garlic for 5 minutes until soft.
  3. Add dried marjoram, coriander, chickpeas, soy sauce, vegetable broth and bring to boil. Throw in orzo and let it simmer on medium heat for 7 minutes (check cooking time of your pasta on a package).
  4. Pour nutritional yeast liquid leaving sediments in a glass. Season with black pepper, salt and turmeric powder. Give it a taste. Adjust seasoning if needed.
  5. Turn off the heat and serve immediately.
