Ingredients

Scale
  • 3 medium potatoes
  • 1 medium carrot
  • 1/2 block firm tofu (150g)
  • 300g vegan sausage, diced
  • 2 medium pickles, diced
  • 1 C canned green peas
  • 1 small purple onion, finely diced
  • 1 C vegan mayonnaise
  • Kala Namak to taste

Instructions

  1. Boil or steam unpeeled potatoes and carrots until tender but not mushy.
  2. Meanwhile, drain and pat dry the tofu with paper towels. Dice it into 1/4 inch pieces, sprinkle with Kala Namak and set aside.
  3. Cool down boiled vegetables, peel them and dice into 1/4 inch cubes.
  4. Mix all the ingredients and stir well to combine. Taste for seasoning and serve.

Notes

Feel free to omit vegan sausage or tofu and replace canned green peas with fresh.
