Georgian Cucumber and Apple Salad (Gazapkhuli Salad)

Today I want to share with you the easiest cucumber and apple salad recipe. Gazapkhuli means “spring” in Georgian, and even through it’s the middle of summer, this is a perfect time to enjoy this crispy and refreshing salad.

I don’t know why I didn’t post any Georgian dishes before, because not only this cuisine has many originally vegan recipes, it is also full of diverse exquisite flavors.

Peel and slice cucumbers into thin strips. If you want, you can keep the skin on for a nice color and crunch.

Add cucumbers, minced garlic, scallions and dill to a salad bowl.

Core an apple and again, optionally, peel it. Slice the apple into same thin strips. Drizzle it with some lemon juice, while slicing, to prevent it from oxidizing.

Mix sliced apple with the rest of salad ingredients and serve. Top with ground sumac if desired.

Note: in original recipe cucumber and apple are grated, but I prefer to thinly slice them instead.

Sumac is completely optional, but I like how it enhances the flavors of this dish.

Ingredients

  • 2 medium cucumbers (300g)
  • 1 large green apple
  • 1 garlic clove, minced
  • 1-2 scallions, diced
  • small bunch of dill, chopped
  • 2-3 tsp lemon juice
  • 1 tbsp extra virgin olive oil
  • salt to taste
  • ground sumac (optional)
