Vegan Cheesy Broccoli Soup

This is another warming and comforting bowl of veggie goodness! Cheesy and creamy with no cream or cheese broccoli soup.

To make it even better serve it with homemade croutons or in a bread bowl with extra swirl of cashew cream.

Bring a large pot of water to boil and cook potatoes. When potatoes are almost done add broccoli and cook for few more minutes uncovered until broccoli is just tender. Prepare an ice bath and set aside.

Using a spider remove broccoli and put it in ice bath to save its vibrant color. Drain potatoes.

Add cashews and 1/2 cup of vegetable stock into a high-speed blender. Blend until smooth. Then add the rest of ingredients saving few broccoli florets for garnishing.

Again blend everything until nice and smooth.

Gently heat the soup on a stove and serve. Garnish with remaining broccoli florets.

Ingredients

  • 2 C broccoli florets
  • 2 medium potatoes
  • 1/4 C raw cashews
  • 2 tbsp nutritional yeast
  • 1 tbsp miso paste
  • 1 tsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 1/2 C vegetable stock
  • salt and black pepper to taste
