Sparkling Mint Cucumber Lemonade

There were lots of extremely hot days this summer. And what is better than good old lemonade to kill the thirst? Make it even more refreshing by adding fresh mint leaves. Or you can prepare this extra flavorful sparkling mint cucumber lemonade!

Feeling a bit naughty? Spike it with a shot of Hendrick’s for a perfect summer cocktail!

First prepare mint simple syrup.

Combine water and sugar in a small saucepan and bring to simmer. Add two sprigs of mint and let it steep on low heat for 10 minutes. Switch off the heat and remove the mint.

Meanwhile blend cucumber in a food processor or a blender adding a little bit of water if needed. Place a sieve over large bowl. Transfer minced cucumber into the sieve and leave it for a while. Wait until you have around 1/2 cup of cucumber juice. You can also press the pulp to squeeze the juice.

To make lemonade mix together cucumber and lemon juices, mint syrup, lemon slices, handful of mint leaves and sparkling water. Chill in a fridge for an hour. Alternatively you can make lemonade base and top it up with sparkling water later.

Serve over ice with a slice of cucumber.

Ingredients

  • 300g cucumber, makes 1/2 C of juice
  • 1/2 C sugar
  • 1/2 C water
  • bunch of mint, divided
  • juice of 3 lemons, around 1/2 C
  • 1 lemon, sliced
  • 3 C sparkling water
  • slices of cucumber for garnishing
