Lemon, Garlic and Ginger Butter Beans

Looking for a side dish that is delicious and equally nutritious but doesn’t look boring? Here you are!

Creamy and sweet butter beans never tasted better. They are cooked with lots of garlic, ginger and lemon and served with fresh cilantro that makes this dish so refreshing yet piquant.

When cooking butter beans make sure they are tender and well done before mixing with the sauce.

Soak your beans for 6-8 hours or overnight.

Drain and cover with fresh water. Cook until tender for about an hour.

Grate lemon zest and set aside.

Blend garlic, ginger and lemon juice in a food processor into a thin paste.

Heat oil in a non-stick pan over medium heat. Temper cumin seeds until fragrant and add garlic-ginger paste. Stir for a minute.

Add cooked and drained beans, season with salt and pepper and mix well. Then switch off the heat and stir in fresh cilantro and lemon zest.

Serve hot as a side dish or cold as a salad.

  • 4 garlic cloves
  • 1-inch piece of ginger
  • juice and zest of 1/2 lemon
