Finally, I made the perfect dough for my vegan gingerbread men! It is so smooth and rolls out so easily! Just blend it in a food processor for less fuss.
I didn’t use molasses cause we don’t have it where I live, so I substituted it for agave syrup. These gingerbread cookies are moderately spicy, to my liking, and next time, I will add a little bit more. But hanging them on a Christmas tree added a lovely, yummy scent to my room atmosphere.
So if you haven’t baked your vegan gingerbread men yet, it’s time to do it now!
Place flour, baking soda, salt, spices and sugar in a food processor. Pulse a couple of times to mix well. Add shortening and process until combined. Mix agave syrup and milk in a separate bowl. Pour slowly while blending the dough until it forms a ball. Wrap it in cling film and let it rest in the fridge for a couple of hours or overnight.
Preheat oven to 325˚F.
Sprinkle your working surface with a bit of flour. Roll the dough 1/4 inch thick. I like my cookies to be relatively thin. Cut into desirable shapes and place on a baking tray lined with parchment paper.
Bake for 10-13 minutes. The cookies will be soft first, but they will harden shortly.
Let the cookies cool down on a tray for a few minutes before transferring them onto a cooling rack.
To make vegan royal icing, first sift the powdered sugar. Then whisk the aquafaba in a mixer until you see stiff peaks. Add half of the sugar and whisk for a few more minutes. Add the rest of the sugar and lemon juice and mix until combined. The consistency should be pretty thick.
Decorate your gingerbread men when they are completely cool.

Notes
My vegan shortening is made of organic red palm and coconut oils. It makes the dough very easy to work with.
