Super easy recipe for vegan gingerbread men cookies!

Ingredients

For gingerbread cookies:
  • 2 C all-purpose flour
  • 1 C whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 tsp gingerbread spice mix
  • 3/4 C brown sugar
  • 1/2 C agave syrup
  • 1/2 C vegan shortening
  • 1/4 C plant milk
For vegan royal icing:
  • 120g powdered sugar
  • 2 tbsp aquafaba
  • 1 tsp lemon juice
For gingerbread spice mix:
  • 6 tsp cinnamon
  • 6 tsp ginger
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • 1/4 tsp black pepper

Instructions

  1. Place flour, baking soda, salt, spices and sugar in a food processor. Pulse a couple of times to mix well. Add shortening and process until combined. Mix agave syrup and milk in a separate bowl. Pour slowly while blending the dough until it forms a ball. Wrap it in cling film and let it rest in the fridge for a couple of hours or overnight.
  2. Preheat oven to 325˚F.
  3. Sprinkle your working surface with a bit of flour. Roll the dough 1/4 inch thick. I like my cookies to be relatively thin. Cut into desirable shapes and place on a baking tray lined with parchment paper.
  4. Bake for 10-13 minutes. The cookies will be soft first, but they will harden shortly.
  5. Let the cookies cool down on a tray for a few minutes before transferring them onto a cooling rack.
  6. To make vegan royal icing, first sift the powdered sugar. Then whisk the aquafaba in a mixer until you see stiff peaks. Add half of the sugar and whisk for a few more minutes. Add the rest of the sugar and lemon juice and mix until combined. The consistency should be pretty thick.
  7. Decorate your gingerbread men when they are completely cool.

Notes

My vegan shortening is made of organic red palm and coconut oils. It makes the dough very easy to work with.
